Description

This Chicken Parmesan Casserole is a comforting twist on the classic Italian dish. Tender chicken pieces, marinara sauce, and layers of melted mozzarella and parmesan cheese come together in a rich and delicious casserole.   • 4 boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
  • 2 cups marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup seasoned breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried basil
  • ½ tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with non-stick cooking spray or olive oil.
  • Cook the chicken: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken pieces, seasoning them with salt, pepper, garlic powder, onion powder, basil, and oregano. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove from heat.
  • Assemble the casserole: In the prepared baking dish, spread a thin layer of marinara sauce on the bottom. Add the cooked chicken pieces on top of the sauce. Pour the remaining marinara sauce over the chicken and spread it out evenly.
  • Add the cheese: Sprinkle the shredded mozzarella and grated Parmesan cheese over the chicken and sauce layer. Then, top with a generous layer of seasoned breadcrumbs.
  • Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is melted, bubbly, and golden brown, and the breadcrumbs are crispy.
  • Garnish and serve: Take it out of the oven and garnish with fresh basil or parsley, if you like.
