  • 2 cups frozen hashbrowns, thawed
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1 large egg
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Cooking spray

Instructions

  • Preheat the oven to 375°F (190°C). Spray a muffin tin with cooking spray or line with silicone muffin liners.
  • In a large skillet, cook the sausage over medium heat, breaking it up with a spatula until fully cooked and browned. Drain any excess fat and set aside to cool slightly.
  • In a large bowl, combine the cooked sausage, thawed hashbrowns, shredded cheddar cheese, green onions, egg, garlic powder, onion powder, salt, and pepper. Mix everything together until well combined.
  • Scoop the mixture into the prepared muffin tin, pressing it down gently to form small bites.
  • Bake for 20-25 minutes or until the hashbrowns are crispy and golden brown on top.
  • Let the bites cool for a few minutes before carefully removing them from the muffin tin.
