- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup grated Parmesan cheese
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 cup chicken broth (for baking)
Instructions
- Begin by preheating your oven to 375°F (190°C).
- Warm the olive oil in a skillet over medium heat.Add the minced garlic and spinach, cooking for 2-3 minutes until the spinach wilts. Remove from heat and set aside to cool.
- In a mixing bowl, combine the ricotta, mozzarella, Parmesan, oregano, basil, and the cooled spinach mixture. Stir until everything is evenly incorporated.
- Slice a pocket into the thickest part of each chicken breast, making sure not to cut all the way through. Carefully stuff each pocket with the spinach filling, then secure the opening with toothpicks.
- Sprinkle salt and pepper evenly over both sides of the chicken breasts.
- Heat a skillet over medium-high heat, and sear the stuffed chicken breasts for 2-3 minutes per side, or until they are golden brown.
- Transfer the chicken breasts to a baking dish, pouring chicken broth around them. Cover with foil and bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
- Remove the toothpicks before serving, and enjoy immediately.
Notes
- You can substitute the ricotta with cream cheese for a richer filling.
- For extra flavor, sprinkle the chicken with extra Parmesan before baking.
- If you don’t have fresh spinach, frozen spinach can be used (make sure to squeeze out the excess water).
